Our story

A kitchen built around one stubborn idea

Moon Grill began with a single charcoal pit dug behind a small shop in Zafarwal. No menu, no signage — just mutton that had been marinating since the night before and neighbours who kept coming back.

Six years on there are two houses, two hundred dishes and a kitchen that spans Arabia to the Far East. What has not moved is the pit. Everything worth eating here still passes over open flame, and every masala is still ground the morning it is used.

Four steps we refuse to shorten

There is no shortcut to a six-hour roast. Our kitchen is organised around the parts of cooking that cannot be rushed — and everything else is built to keep out of their way.

    Marinate

    Eighteen spices, ground that morning, worked into the meat and left overnight.

  2. 02

    Fire

    Coconut charcoal, held at temperature. Nothing touches the grill until the pit is right.

  3. 03

    Rest

    Every cut rests off the heat so the juices settle instead of running onto the plate.

    Serve

    Plated at the pass and carried straight out. Still steaming when it reaches you.
